For best results use good quality chocolate, we recommend using our 70% Dark Chocolate, which is free from palm oil and vegetable oil.
Ingredients
225g good quality butter cut into small cubes
350g dark chocolate broken in to pieces
2 tsp strong coffee
225g caster sugar
1tsp vanilla extract
4 medium eggs
75g self-raising flour
225g dark chocolate cut in to small chunks
Icing/cocoa powder for dusting
Method
Pre heat oven to 190/170C fan, gas 5.
Line a 30cm x 23cm baking tray with parchment paper, lightly grease with butter.
Place a medium heatproof bowl onto a saucepan filled with a small amount of simmering water, leave on a low heat.
Put into the bowl 350g of butter, add the dark chocolate chunks, add sugar. Stir until melted.
Melt/dissolve coffee in a half a tsp of boiling water, stir and add to mixture.
Beat eggs in a separate bowl.
When all the mixture has melted take off the saucepan and set aside to cool.
Beat in eggs one at a time.
Sieve flour in and fold in.
Pour half the mixture into your prepared tray, sprinkle your chunks evenly on to mixture, then pour the remaining mixture. Using pallet knife smooth surface.
Bake for 20-25 minutes or until firm to the touch.
When cool cut into squares and dust with icing sugar or cocoa powder.
Louis’ Extra Tip
For a very special occasion. Cut up some extra Milk chocolate into chunks and sprinkle on the top of mixture before placing in oven. Using pallet knife gently press down into mixture.
